It’s Monday. How was your weekend? Mine was busy, hectic and a little bit crazy.
I spent Friday in a horribly dry and boring continuing education class…a day of statistics isn’t my idea of a good time. Friday night we had dinner with our friends J&C and their two boys. It was a crazy, loud night at our house, but we had a wonderful time with friends.
Saturday morning, my DH went to the freezer to get out some sausage and found that things were beginning to thaw out. It turns out that when I cleaned the freezer on Wednesday, I forgot to turn it back on. We discovered this AFTER we bought a new upright freezer. Thankfully, Sears has a 30 day return policy. The new freezer is going back. I feel like quite the dumbass. But hey, the freezer is really clean. Also, bringing a new freezer in required me to clean the office. It is lovely to have it cleaned, but the reason it got cleaned sucks.
Saturday night we had dinner with our friend M&M and their sweet puppy W. The crock pot Hungarian Goulash pretty much sucked, though the salad was delicious (recipe below) and simple, too.
Sunday morning we went to church at Arlington Hills United Methodist Church in Maplewood. It was very nice. Our friend J is a pastor there and was preaching. It really reminded me of the Catholic services I grew up on. We spend the day shopping and Goodwill hunting (as my friend A calls it). B got some great dress pants, something like 6 pairs for no more than $6 each, some as little at 2.50. I got a super cute long denim skirt (only 3.50) and a yummy silk sweater (2.50) plus a tan colored jacket from Limited (8.99). LOVE it! We also got the kiddos a few things. We picked our friend A up at the airport and headed home. Last night was a lazy night, but lovely none the less.
Harvest Salad
1 bag of mixed baby greens
1/2 c. Craisins
1/2 c. chopped pecans
2 apples diced (not peeled)
poppy seed dressing to taste
It is as simple as tossing all of the ingredients together. Adding as much or as little poppy seed dressing as you choose. The kids loved it, as did the adults.
