Fish Salad

We are in St. Louis, MO on our way home. I can’t wait to sleep in my own bed tomorrow night. We have been eating a fair amount of good food. Our favorite of the trip home has been the fish salad sandwiches. Yesterday, we stopped at a Mexican bakery in Homestead, FL to pick up some lovely rolls to enjoy our sammies on. They were wonderful! Today we stopped at a Panera Bread in Chattanooga, TN and picked up some fresh baked bread. Again, a delicious lunch.

While we were in the Keys, we went fishing nearly every day. Finally on Friday, we got into the Yellowtail snapper, grunts and various other fish, including M catching a hogfish (our favorite of the reef fish).

We had all the fish we wanted for supper on Friday night. With the left over fish (there was a lot), I made fish salad. Think tuna salad, only better.

Fish Salad (for sandwiches)

Approx 3 cups of flaked cooked white fish
1 to 1 1/2 cups of mayonnaise
1/2 to 3/4 cups of celery, diced
Approx 1/2 cup chopped dill pickle
1/4 to 1/2 cup diced onion
Salt and pepper to taste

Flake the fish. Add celery, pickle and onion. Mix together with mayonnaise. Add salt and pepper to taste. Enjoy.
