30 days Challenge…I am thankful for: Day 9

November 9. Where has the time gone? I don’t know. I think I remembered to start the crock pot this morning. I know I finally remembered to put the crock in it…better than the last 2 days :(. But that is okay, because on Wednesday I made homemade ricotta cheese from Ina Garten (Barefoot Contessa). I started out with a Pinterest recipe, but it never separated into curds in whey. Anyway, I digress. The homemade ricotta was wonderful and I made baked spaghetti (delish as always).

Yesterday I took dinner to my friend D who just brought home an amazing little miracle, E. He is absolutely perfect! I wish I could have snuggled with him, but I am fighting a nasty cold and don’t want to risk getting anyone sick. I brought them 2 pans of baked spaghetti (one for now and one for the freezer). D said it was wonderful! I am so glad they enjoyed it.

I woke up sick this morning. Ugh, I need to get better. But that brings me to my 30 day challenge for today. I am thankful to have access to quality healthcare and the medicines I need to get and stay healthy.
